Filet Mignon - The Teriyaki Way



Filet mignon closeupYou can always buy bottled teriyaki sauce but there is nothing like the real thing. This recipe shows you how to make a version of teriyaki sauce using balsamic vinegar, butter, shallots, garlic and beef broth along with traditional ingredients like soy sauce, mirin, and sugar. Just the right combination for a prime steak like Filet Mignon.

Ingredients

  • 2 lbs. filet mignon steak, 1 ½ inches thick
  • Salt and black pepper to taste
  • 2 tablespoons vegetable oil
  • 1 tablespoon mirin

For the teriyaki sauce

  • 1 ½ tablespoons unsalted butter
  • 1 shallot, minced
  • 2 cloves garlic, finely minced
  • 1 cup balsamic vinegar
  • 2 teaspoons sugar
  • ¼ cup beef flavored broth
  • 2 tablespoons soy sauce

Directions

Preheat the oven to 450°F. Season the filets with salt and pepper. Allow the filet mignon to stand at room temperature for 20 minutes.

In the meantime, melt the butter in a saucepan until bubbling. Add the shallots and garlic and cook for 3 minutes. Pour in the balsamic vinegar and bring to the boil. Once the sauce starts boiling, lower the temperature. Simmer for 15 minutes until the sauce reduces to half. Add in the sugar, broth, soy sauce and mirin. Stir well and bring to the boil. Reduce the heat to low and let the sauce simmer for 5 minutes.

Now heat a frying pan over a high heat until almost smoking. Add in the oil and swirl to coat the base of the pan evenly. Place the steak filets in the pan so that they do not overlap. Cook for 2 minutes, turn the steaks over and then cook for another minute.

Next, place the steaks on an ungreased baking sheet and bake for 5 minutes or until done. Take the steaks out of the oven and allow them to rest for 5 minutes before serving. Pour the teriyaki sauce over the steaks just before serving.
