Teriyaki chicken is the signature dish of the teriyaki style of cooking. This recipe uses an authentic teriyaki sauce made from sake, soy sauce, mirin and sugar. A must-have dish for a Japanese themed dinner and easy to make – even without bottled sauce!
Ingredients
- 3/4 lbs. chicken breasts
- 2 tablespoons sake
- 4 tablespoons soy sauce
- 4 tablespoons mirin
- 2 tablespoons sugar
- 2 tablespoons vegetable oil
Directions
Prick the chicken all over using a fork. Combine all the other ingredients together in a bowl. Use this mixture as a marinade for the chicken and place it in the refrigerator for 15 minutes. Heat the vegetable oil in a frying pan.
Place the chicken in the pan and fry over a moderate heat until nicely browned. Turn the chicken pieces over and brown the other side as well. Now pour in the chicken marinade into the pan. Cover and allow the chicken to cook on a low heat until done. Take off the lid and let the chicken simmer until the sauce reduces.
