Curry bread or kare pan is a popular food in Japan. It is made by wrapping curry in a piece of dough, coating in panko crumbs and then deep frying or baking the bread.
Ingredients
- 1 teaspoon yeast
- 1/4 cup warm water
- 3 cups flour
- 2 tablespoons sugar
- 1 teaspoon salt
- 2 tablespoons unsalted butter
- 1 cup water
- 1 cup leftover curry
- 1 egg, lightly beaten
- 1 tablespoon milk
- 1 cup panko bread crumbs
Directions
Combine the yeast and warm water in a bowl and let it to rest for 10 minutes. Add in the flour, sugar, salt, butter and water and knead the dough on a floured surface for about 10 minutes.
Grease a bowl and place the dough in it. Cover it with plastic wrap and let it stand till it has doubled. This should take about 90 minutes. Now knead the dough for 2 minutes and then let it rest till it has risen again. Again knead it for 2 minutes. Divide the dough into 8 pieces.
Mash the curry so that it becomes paste-like. Combine the milk and egg in a bowl. Roll out one of the dough pieces into a circle, about 6 inches in diameter. Spoon some of the curry into the center of the circle. Brush the egg-milk mixture around the edge of half of the circle. Now fold over the circle and pinch the edges so they get sealed. Repeat this process for all the other dough pieces.
Dip each dough envelope into the egg-milk mixture and then roll it in the panko bread crumbs until evenly coated. Cover the bread with plastic wrap and set it aside to rise.
Heat the oil in a pan. Deep fry the bread until golden brown on both sides.
Tips
Drain out the excess oil from the curry bread after frying, by placing it on paper towels while it is cooling. The picture is attributed to Wikipedia.
